Potato Bagel Filling


POTATO VEG FILLING FOR BAGELS

On a Sunday, where brunch tops the meal of the day, we decided to make a veg-topping by using big sized baking potatoes not outweighing the baking deliciousness but needed something quick, delicious and filling.

This potato filling can be used as a topping or filling for any sandwiches, wraps and not just bagels.
I often make this filling and sweet potato spread for my kids' lunchbox. It makes an easy snack on the go! we have used this filling to make stuffed parathas as well.

We included some more vegetable goodness by adding green peas, green beans, carrots, and the decision to include fresh coriander took this topping altogether to a different level and, the result was just yum!

Here comes the recipe.

 VEGETABLE FILLING FOR BAGELS

Preparation time: 20 mins
Cooking time: 20 mins
Total time: 40 mins
Makes: topping for 4 bagels

INGREDIENTS:

3 medium potatoes(boiled, but left in hot water until use)
8-10 green beans(thinly chopped)
3 tbsp of green peas
2 carrots, finely chopped
1" piece of fresh ginger(grated)
1/2 bunch of fresh coriander, roughly chopped
salt to-taste

Cucumber slices and sesame seeds - for garnishing

DIRECTIONS:

First, cut the bagel into 2 halves and toast each half into a toaster or in an oven slightly.

While the bagels are getting toasted, put beans, peas, and ginger into a pan with a few drops of water and stir fry them until soft but crunchy.

Then remove the boiled potatoes from the hot water, peel the skin and mash them with salt and half the coriander leaves to form a lump-free spread.

Now, use this mash as a base layer and spread the vegetables on top of the potato layer and garnish with fresh carrots.



Notes:
1) These bagels can make a substantial breakfast or a light brunch and can be easily transported as a travel/lunch box companion. 

2) You can mix all the ingredients into one spread and use it as a filling or a topping as well as I have done.

3) You can add any other vegetables of your choice or even skip all the vegetables and just season the potato mash and use as a filling.


 

Serving Suggestions:

We had these bagels with some cucumber slices and few sprinkles of sesame seeds for the extra crunch. Try it!

  1. Must try this recipe. At first I thought it was doughnuts with an exxciting topping! Yours is much healthier than that. :-)
