Cupcakes with no Cakes?!
HEALTHY CUPCAKES On a hot sunny day with scorching heat almost hitting the roofs, a pun is not desired, but that’s what exactly happened when I offered my girls, these well dressed disguised cupcakes today.

I am super excited to be sharing this cupcake recipe. Wait- still referring as cupcakes? 

I am not yet enlightened to give an appropriate name to these lovely little, swirly, creamy, yogurty-did I give out the secret? Yes, there is no element of a mystery anymore, or should I say more than one.

Firstly, there are no cakes in these cups and what tops as the icing is not the icing but the yogurt.

Healthy and hearty little cupcakes and the sight of those disappointedly turning into smiling, happy- face. Here is the recipe!


Yogurt ICING CUPCAKES

Yoghurt Icing Cupcakes
Preparation time: 30 mins
Extra Time-3 hrs (2 hrs draining + 1 hr setting)
Total Time-3 hrs 30 mins include the Waiting time
Makes: 6-8 cupcakes

INGREDIENTS:
500 gm regular yogurt, preferably greek yogurt
A cheesecloth
A Sieve
A  bowl
Icing bag with a star tip
6-8 cupcake cases
Any choice of fruit-I have used two bananas, a handful of blueberries and raspberries
Summer sprinkles

METHOD:
1). Placing a sieve on top of the bowl and line it with the cheesecloth. Ensure the base of the sieve is not touching the bowl.

2). Put the yogurt on top of the cheesecloth and gather all the edges of the cheesecloth together. Keep it in the fridge for 2 hrs to drain if any liquid/whey from the yogurt into the bowl.

3). You will see the whey separated in the bowl. Discard this whey.
4). Now, this yogurt is a lot creamier and thicker and can be used as an icing easily. Insert the icing bag with the star tip.
YOGURT ICING
5). Fill the yogurt into the icing bag. Line a baking cupcake tray with cupcake cases, and cover the cupcake with chopped fruit of your choice. I have used sliced bananas as the base.

6). Then start icing on top of the fruits, ensuring the icing covers the fruits giving a fuller look.

YOGURT ICING CUPCAKES
NOTES:
* If the cupcake cases are not too thick to hold the heavy yogurt icing, you can always use 2 cases to give support to keep the icing.

*Drop some fruit or sprinkles or both and put them in the fridge for an hour to set and slowly flip them from the cupcake tray and serve immediately.

*If you are lucky to have thicker cupcake cases, then you can skip using the tray and directly put the fruit content and top it with the icing. It just holds well.

But anything for these little visual cheats or disguised treats. Have a yummy day!
