Khajoor Barfi-Date Bites

Dates, nature’s candy, when combined with honey, nature’s nectar, is a perfect match made in heaven that one can enjoy on the earth. 

Delicious Brown Date bites that don’t bite at all! Oh boy, Welcome to the guilt-free indulgence.

In Hindi, Burf means Snow. In this recipe, the date mixture is brought to set to a particular shape,  under cold temperature and hence the name Burfi.

Traditionally, these burfies are made with dry fruits, nuts, seeds and ghee-clarified butter and were seasonal in winters due to the freezing conditions to keep the body warm. 

I have adapted this recipe and have replaced ghee with coconut oil, and it just works the same.

Date bites

Preparation time: 20 mins
Cooking Time- 10 mins
Total Time-30 mins

1 cup of soft Medjool dates - (about 16)
pitted and coarsely chopped
¼ the bowl of almonds, toasted or roasted
¼ th cup of cashew nuts/hazelnuts toasted or roasted
A ¼th cup of pistachios, roasted or toasted
1 tbsp of coconut oil
1 tbsp of honey
2 tbsp of toasted coconut flakes
1 tbsp cocoa powder, raw(optional)
1 tsp of Himalayan salt (optional but highly recommended)
1 tbsp of blue/white poppy seeds
1 tbsp of black/white sesame seeds(optional)
 Start by pre-heating the oven to 350˚F and place the almonds and hazelnuts, if using, on a lined tray and dry roast them or toast them until crispy. Then toast the cashew nuts and pistachios, followed by coconut flakes and the seeds separately.

When all the toasted seeds are removed from the oven, turn the oven off. Then place the dates in the oven while the oven is still warm to help them soften.  These softened dates combine with the other ingredients effortlessly.

Now, keep a tsp of each of the nuts separately and place the rest of them in a food processor and, using the pulse option, blend for a minute until the nuts form a crumbly texture. Don’t be tempted to over-grind the nuts to a flour-like consistency. It will result in the oil separating from the nuts making the surface go lumpy. We are looking for a coarse crumble of nuts.

Once the crumble forms, remove the pits from the dates and chop them coarsely and put them in the food processor/blender along with the coconut oil and give a pulse until the dates combine well with the nut crumble.

Then, roughly chop the retained nuts and mix them with the dates. Also, add salt, cocoa powder (if using) and coconut flakes at this point and mix all the ingredients to form a sticky mixture. 

 Line a baking dish with some baking parchment and spread the date mixture evenly. Then sprinkle the sesame seeds and the poppy seeds on top of the mix and, using a spatula, press the seeds into the mixture to evenly coat the top layer.

Finally, drizzle the honey on top of the spread and allow it to set in the fridge for 30 minutes.
After 30 minutes, remove the date fudge from the fridge and cut them into the desired size of bites.
1. You can store this into the freezer for up to 2 months if it lasts until then. Else, please place them in a bowl and enjoy the chewy bites!

2. If you don’t like the chewy and crunchy texture, then blend all the ingredients to form more of a fudgy texture.

3. If dates/nuts are hard, soak in warm water for 5 mins and then drain. Enjoy!
