Chickpeas Summer Bowl


Who can refuse a glitzy, single bowl of textures and flavours perfectly combined and served on a hot summery day? That is Summer Ball Bowl to us, a simple nourishment bowl to revitalise.

We made this nourish bowl for a smooth, light and healthy lunch to avoid spending long hours standing in the kitchen on a beautiful sunny weekend. Instead, we love our beautiful, green lawn with the music on, plus this nourish bowl is a weekend bonus along with some sun.

This bowl is put together in merely a few minutes with the most accessible everyday ingredients without much fuss, and it is a complete meal in itself to nourish your cells most simply.

At LC, we are a big fan of fresh mangoes and cherry tomatoes. But you can customise and build your bowl with any vegetables or fruits of your choice. Here is our recipe.


Chickpeas summer salad

Preparation Time: 10 mins
Assembling Time: 10 mins
Total Time: 20 mins
Yields: 2 servings

2 cups cooked chickpeas, or 2 cans of garbanzo beans, drained
1 ripened mango, chopped
1 medium bell pepper chopped
½ cup celery, chopped
½ bunch of mint leaves, chopped
2 sprigs of fresh coriander, chopped
2 handfuls of cherry tomatoes, chopped roughly
1 cucumber, half sliced and half chopped
1 tbsp lemon juice
½ tsp Himalayan salt

Take a large bowl and add the chickpeas, bell pepper, celery, mango, tomatoes, herbs and chopped cucumber. Mix the salt and the lemon juice and toss all the contents in the large bowl to coat evenly. Serve immediately with some slices of cucumber.

Serving Variations: Fresh ground black pepper and boiled potatoes make this dish more filling.
You can further increase the nutrient-dense value of this bowl with homemade hummus or just plain tahini. Try it!
