Cilantro Sweet Potato Spread


CILANTRO AND SWEET POTATO SPREAD

New school year, new hopes, new dreams and while school doors re-open next week, I'm looking forward to Back to School Lunchbox Journey!

A healthier lunch doesn't mean, you crawl your back with long standing hours. Infact the lesser the ingredients, the more is the joy of preparing the luncboxes. Everything lies in the choice.

Besides lunchbox days, there are also some days when we want a quick fuelling brunch that is simple, savoury, creamy, satisfying and also the one that can save us from spending long-standing hours in the kitchen.

And all we can think of is an easy spread and a wholesome wrap. Quickie!

There were some seeded bagels in the pantry. There was handsome amount of fresh cilantro in the fridge and our deary bounty sweet potato who is a victim of identity crisis I'm afraid.

I wonder why Sweet potato is called a potato when it is actually a root vegetable and interestingly, it is the member of Morning Glory family.

When we assembled the ingredients we had, we exactly knew what we wanted to make-  Cilantro Sweet potato spread.

This herby delicious spread is somewhere in between hummus and butter in terms of texture. It is smooth, savoury and is delicately flavoured to add that extra oomph factor. It is gut-friendly.

To make this spread, we removed the skin of the potato, we chopped them into small chunks and boiled in little water as these cook quicker than the regular common potatoes.

We mashed these potatoes in the same boiled water with a fork while still hot, mixed in chopped cilantro with some salt and seasonings.

We then took it off by spreading the boiled potato mash on bagels and topped it with some more added goodness of vegetable medley but in all honesty, it is delicious on its own. Here is the recipe!

CILANTRO AND SWEET POTATO SPREAD

veg bagels
Preparation time: 20 mins
Cooking time: 20 mins
Total time: 40 mins
Makes: topping for 4 bagels

INGREDIENTS:
2 sweet potatoes boiled and mashed
2-4 green beans(thinly chopped)
3 tbsp of green peas
2 tbsp of sweet corn
1 carrot, chopped
2 tbsp of fresh cilantro, chopped
salt to-taste

DIRECTIONS:
1) First, put the vegetable medley into a pan with a few drops of water and cook them until soft but crunchy.

2) Cut the bagel into 2 halves and toast each half into a toaster or in an oven slightly.

3) Mix the boiled potatoes with salt and cilantro leaves to form a lump-free spread.

4) Spread the potato as a base layer on the toasted bagel and top the vegetables on the potato layer and garnish with fresh cucumbers.



Notes:

1) These bagels can make a substantial breakfast or a light brunch and can be easily transported as a travel/lunch box companion.

2) You can make this herby spread with just sweet potatoes and cilantro and it tastes great on its own.

3) You can try replacing the cilantro with any herbs like mint, dill or basil.

4) You can customise with boiled eggs, chicken or tofu for that much-needed protein dose for lunchbox.

5) This spread can be used as a vegetable topping or a filling for any wraps/sandwiches with lettuce or even great with tortillas and flatbreads.



Serving Suggestions:

We enjoyed this spread with some multi seeded vegan bagels with some cucumbers and some freshly shredded carrots. Try it!

I literally mashed a couple sweet potatoes to go along with dinner yesterday and they came out so buttery I thought, you could spread this on toast -- and then today I saw your recipe and it's like you read my mind!   13. I as a man also really likes to cook in the kitchen. Because nowadays food that is already in supermarkets is very expensive.

    The alternative is to make your own food. That way we can be more economical but still better for health.

    1. I hear your struggle Julia, they are a bit difficult to chop considering it is a root vegetable, so I flatten it by removing a small length first, so it rests on the chopping board making it easy. X

I love sweet potatoes and all the ingredients in your spread, so I'm making this soon. I have a question for you. Fresh cilantro is difficult to find here, but we do get chopped frozen. Do you think the frozen will work in your spread?

Yes, you can use frozen cilantro, preferably thawed and you can remove the excess moisture using a kitchen towel.Alternatively, fresh dill leaves is the next best fit. Would love to know how it goes.   26. This is such a MULTIUSE SPREAD, I use a lot of sweet potatoes in my dishes but never attempted to try a spread like this one. Would love to try this . Liked the Fresh cilantro used in the spread, it will add great flavor to the dish. Thank you for the recipe Hasin.
